My little blog has always been called "Hi, I'm Amy!". I've always wanted to change it to something more original, but I've had trouble deciding what to call it. I've tried a couple of names that never fit and I ended up going back to the tried and true... but tonight, one hit me. And I think it's a keeper. Well, I hope anyway. I've really enjoyed raising my 4 pet chickens. The first day that I went to feed them and found a little brown egg, I was so excited. Now I get about 4 eggs a day. A little over 2 dozen a week!!! If you live near me and would like some fresh eggs from healthy, well cared for chickens - just let me know :)
Every once and a while I'll get a "freckled egg" (like the one in the picture that I took at the top of my page). They are my favorite. For no other reason that I just LOVE freckles. Now, I haven't always looooved freckles. When I was younger, I actually hated them. I hated that during the summer my face was covered in freckles and most other people's weren't. I hated that my chest, shoulders and back had freckles and I was so jealous of people who had beautiful clear skin. I NEVER wore sleveless shirts.
As I've grown older, I've learned how unique freckles really are and I've grown to love them. After all...
So, I am not the best cook ever. BUT, I've been trying really hard lately. I've been gradually making more and more home-cooked meals.
I love crabcakes. They are one of my favorite foods ever. Tonight I was in the mood for something "crabcakeyish". Since we didn't have any crab meat, I decided to make tuna cakes. I found a recipe for salmon patties and substituted tuna. It actually worked out pretty well.I also made some sour cream dill sauce to put on top but I took the pictures... then remembered I had it in the fridge chilling. Oh well.
Gary wasn't thrilled about having "tunacakes" for dinner so I loaded them up with one of his favorite ingredients. Onions. I don't even like onions very much. The things we do for love! :)Hmmm... what shall we have the rest of the week for dinner? Any suggestions?
Amy Locurto's Avocado Enchiladas sound reeeally good...
PS - Do you sew? Will you make one of these for me? Actually 3. Two small and 1 larger. For my couch. :)
